Vitamin E is a fat-soluble vitamin that acts as an antioxidant and protects body tissue from damage caused by unstable substances called free radicals. Vitamin E is also important in the formation of red blood cells and helps the body to use vitamin K. Sources include: sunflower oil, safflower oil, wheat germ, and soybean. DEFICIENCY of vitamin E can be the result of inadequate intake and depleted reserves either due to increased need or reduced absorption. It causes areflexia, ataxia, ophthalmoplegia, and skeletal myopathy. Vitamin E TOXICITY is associated with reduced platelet aggregation.
